I’m on a corn tortilla kick right now. So much that the Emeril flat iron griddle stays out on the stove top as a permanant fixture. Try this recipe for a post workout meal, breakfast, or lunch. Homemade easy & you control the ingrediants and calories!
3 corn tortillas
1-2 tablespoons of shredded cheese
2 scrambled eggs divided between the 3 tortillas
1/4 cup black beans (dry beans soaked overnight and boiled. Inexpensive & no chemicals or preservatives added)
2 tablespoons Pico De Gallo
